Is fermented food safe?

Leaving food on the counter to change on purpose sounds risky. It is not, and here is the science of why.
Controlled, not spoiled
Fermentation is not rot. It is a controlled process in which salt, acidity and the right microbes create conditions that keep dangerous bacteria out. Humans have used it to keep food safe for millennia, long before anyone understood the microbiology behind it.
The three guards
Three things stand guard in a good ferment. Salt sets the environment, the beneficial bacteria produce acids that lower the pH, and that low pH is hostile to the microbes that make you ill. Working together, they turn the jar into a place harmful bacteria simply cannot settle.
Trust your senses
A healthy ferment smells sharp, sour and clean. Off smells, a slimy texture, or fuzzy raised mould are the rare signs to stop and start again.
The old rule holds: when in doubt, throw it out. In practice, with enough salt and acidity, it rarely comes to that.
Why we don't pasteurise
Pasteurising would kill the very cultures that make a ferment worth eating. So instead of heating it, we keep everything cold, fresh and alive. It is more work and a shorter shelf life, but that living quality is the whole point.
Done properly, fermentation is one of the oldest and safest ways to keep food. In a real sense, the sourness is the safety.
