4 Autumn Tibicos (Water Kefir) Mocktails with Plum and Beetroot & Ginger
Fizzy, fruity and ready in two minutes: four autumn mocktails built around our two seasonal tibicos, Plum and Beetroot & Ginger.
Tibicos makes a perfect mocktail base. It brings bubbles, a gentle tang and flavour all at once, so you only need a few extra ingredients. One tip before you start: always pour the tibicos last and stir gently, to keep as many bubbles as possible.

1. Spiced Plum Spritz
Warm spices and ripe plums: autumn in a glass.
For 2 glasses:
2 ripe plums, cut into thin wedges
1 cinnamon stick, broken in two
2 star anise
A strip of orange peel
Ice
Method:
Place half a cinnamon stick, a star anise and a few plum wedges in each glass.
Twist the orange peel over the glasses to release its oils, then drop it in.
Add plenty of ice, top up with chilled plum tibicos and stir once.
2. Plum, Thyme & Lemon Fizz
Bright, herbal and gently tart, a lovely aperitif before an autumn dinner.
For 2 glasses:
4 sprigs of fresh thyme
Juice of half a lemon
1 tsp maple syrup (optional)
Lemon slices and ice
Method:
Gently muddle two sprigs of thyme with the lemon juice and maple syrup at the bottom of each glass.
Fill with ice and a lemon slice.
Pour over the plum tibicos, stir gently and garnish with the remaining thyme.
3. Beetroot & Ginger Mule
Deep ruby red with a spicy kick: a fresh twist on the classic mule.
For 2 glasses:
1 lime, cut into wedges
A small piece of fresh ginger (about 2 cm), thinly sliced
A handful of fresh mint
Ice
Method:
Muddle half the lime wedges with the ginger slices at the bottom of two glasses (or copper mugs, if you have them).
Add a few mint leaves and fill the glasses with ice.
Pour over the beetroot & ginger tibicos, stir gently and garnish with a lime wedge and a sprig of mint.
4. Beetroot, Orange & Rosemary Highball
Earthy beetroot, sweet orange and a whiff of rosemary: a cosy, colourful glass for long autumn evenings.
For 2 glasses:
Juice of 1 orange, plus 2 orange slices
2 sprigs of fresh rosemary
Ice
Method:
Roll the rosemary between your fingers to wake up its aroma and place a sprig in each tall glass.
Add ice, an orange slice and half the orange juice to each glass.
Top up slowly with beetroot & ginger tibicos and stir once.
