Two Halloween Mocktails: Plum Tibicos Eyeballs and Carrot Kombucha

2 min read

Looking for Halloween mocktails that look spooky with almost no work? These two take five minutes each: dark plum tibicos poured over clear ice balls with a blueberry frozen inside, so they look like eyeballs, and a carrot kombucha that turns from orange to blood red as you add beetroot tibicos. Watch how we made them on our Instagram.

Tibicos (water kefir) is a naturally sparkling drink made by fermenting sweetened water with tibicos grains, a culture of bacteria and yeasts. Ours is infused with organic fruit, vegetables and spices.

1. Plum tibicos with spooky eyeball ice

The blueberries frozen in round ice look like little eyeballs floating in a dark purple drink.

Ingredients (for 2 glasses)

Method

  1. The day before: place one blueberry in each hole of a round ice-ball mould (or a regular ice tray), fill with water and freeze overnight. For clearer ice, use water that has been boiled and cooled.

  2. Put 2 or 3 eyeball ice balls in each glass.

  3. Slowly pour the chilled plum tibicos over the ice and serve straight away.

Want it bloodier? Swap the plum tibicos for Beetroot & Ginger Tibicos: its deep red colour makes the eyeballs look even creepier.

2. Carrot kombucha with a blood-red beetroot swirl

This one is all about the colours: bright orange carrot kombucha, then a splash of deep red beetroot tibicos that swirls down through the ice like blood.

Ingredients (for 2 glasses)

Method

  1. Fill two glasses with ice.

  2. Pour about 160 ml of carrot kombucha into each glass.

  3. Pour about 60 ml of beetroot tibicos very slowly over the back of a spoon, so it trickles down through the ice.

  4. Watch the colours bleed from orange to red, then stir gently just before drinking.

Tips

  • Chill everything. Cold drinks keep their bubbles longer, and the colours stay sharper.

  • Pour slowly. Both drinks are naturally sparkling: pouring gently keeps the fizz in the glass, not on the table.

  • Don't shake the bottles. Open them carefully, like any naturally fizzy drink.

  • Make it a party. Freeze a tray of eyeball ice the day before and set out both drinks in jugs.

  • Store opened tibicos in the fridge and finish it within a week. Unopened, it keeps for 12 months in the fridge.

FAQ

Can I use other flavours?

Yes. Beetroot & Ginger Tibicos gives a blood-red drink, and Pumpkin & Coriander Seed Kombucha works well in the colour blend instead of carrot.

Can I make the eyeball ice in advance?

Yes, it keeps for weeks in the freezer in a closed box.

Why is tibicos naturally sparkling?

The culture produces carbon dioxide while it ferments the sweetened water. No gas is added.
